Breakfast: Scotch Eggs (fun thing we learned to make while studying Wales)
Lunch: Ramen Noodles or Easy Mac (this is what I offer when I will be out of the house…makes it easier on hubby)
Supper: Chili Lime Pork Strips atop Salad for me; In tortillas for the rest of the family, chips and salsa on the side
MONDAY 3/8/10
Breakfast: Frittata, I’ll be listing this recipe later this week. Apparently and according to Jessica @ http://feedthefamilyforless.com/, this is a super simple dish. You throw together what you have, throw it in the oven and it’s delish! So, first thing tomorrow morning I will be calling her and finding out just how truthful she has been. I’ll tell her what I have and we’ll see what she tells me to do with it. I love a Monday Morning Challenge!
*a word of caution here. I will take this challenge because I know Jessica to be a wonderful cook. She also knows my standards and would not make that claim unless she can prove it. Ha—Do you have any housewife/housemomy friends that help you keep the mundane, a little less mundane? If you do, cherish it, because I know too many women who do not have that!
Lunch: Curry Stewed Shrimp, Side Salad
Supper: Chicken Skillet Alfredo w/ noodles for the kids, Sweet peas, 60 minute rolls
TUESDAY 3/9/10
Breakfast: Sausage and Cream Cheese Wraps with small amt of chives
Lunch: Mexican Cabbage Soup
Supper: Pulled Pork BBQ Sandwiches (This recipe will come this week as this is one I came up with on my own & my family loves it), Slaw
WEDNESDAY 3/10/10
Breakfast: Leftover Frittata
Lunch: “Instant”, read quick, Chicken Soup
Supper: Italian Sausage w/ onions and peppers, creamed spinach
THURSDAY 3/11/10
Breakfast: Pork and Egg Scramble, Toast
Lunch: Grilled Tilapia w/ salad
Supper: Ethiopian Chicken Stew (crock pot)
FRIDAY 3/12/10
Breakfast: Cereal, Toast, Juice
Lunch: Left-overs
Supper: Steaks, Twice Baked Potatoes, Asparagus Bacon Grilled Bundles
SATURDAY 3/13/10
Breakfast: Bacon and Eggs
Lunch: Chicken Nuggets, Fries
Supper: Taco Salads and/or Taco Nachos
SNACKS AND DESSERTS
I am going to try to stay out of the baking business this week. I want to take this week to focus more on healthy snacks. They all will pretty much eat some healthy snack options. But, like all of us, the get lazy and eat what is convenient. For quite some time it has been convenient for me to bake or make something at least a couple times per week. We’ll see how this one goes!
