Lookie Lookie What We are Eating This Week!

SUNDAY 3/7/10
Breakfast:  Scotch Eggs (fun thing we learned to make while studying Wales)
Lunch:  Ramen Noodles or Easy Mac (this is what I offer when I will be out of the house…makes it easier on hubby)
Supper:  Chili Lime Pork Strips atop Salad for me; In tortillas for the rest of the family, chips and salsa on the side
MONDAY 3/8/10
Breakfast:  Frittata, I’ll be listing this recipe later this week.  Apparently and according to Jessica @ http://feedthefamilyforless.com/, this is a super simple dish.  You  throw together what you have, throw it in the oven and it’s delish!  So, first thing tomorrow morning I will be calling her and finding out just how truthful she has been.  I’ll tell her what I have and we’ll see what she tells me to do with it.  I love a Monday Morning Challenge!
*a word of caution here.  I will take this challenge because I know  Jessica to be a wonderful cook.  She also knows my standards and would not make that claim unless she can prove it.  Ha—Do you have any housewife/housemomy friends that help you keep the mundane, a little less mundane?  If you do, cherish it, because I know too many women who do not have that!
Lunch:  Curry Stewed Shrimp, Side Salad
Supper:  Chicken Skillet Alfredo w/ noodles for the kids, Sweet peas, 60 minute rolls

TUESDAY 3/9/10

SNACKS AND DESSERTS
I am going to try to stay out of the baking business this week.  I want to take this week to focus more on healthy snacks.  They all will pretty much eat some healthy snack options.  But, like all of us, the get lazy and eat what is convenient.  For quite some time it has been convenient for me to bake or make something at least a couple times per week.  We’ll see how this one goes!

My Very First Award!

I can’t believe someone read my blog and presented me with an award, but it happened.  It really, really did!  I am so honored to one of the ones chosen by http://mommiesgotfivechildren.blogspot.com/2010/02/my-very-first-award.html to receive…….”The Lovely Blogger Award”.
onelovelyaward
Isn’t it pretty?  Now I am challenged to send it on to 10 deserving bloggers.  Just as Rebecca does, I am going to take my time in the selection process.  There are two that I just absolutely have to start with:
1.  http://feedingthefamilyforless.com/  I know Jessica in real life.  She is lovely inside and out.  If only she had more time to blog!  Lots of great money saving ideas from a homeschooling, Bible believing, book selling, Mom of 4.  Check her out!
2.  http://www.lifeingraceblog.com/  If this lady lived in my hometown, we would be buds.  I love her reading lists, decorating projects and the fact that she gave up a professional career to be Mom.  Did I mention her reading lists?  Love!

Beef in the Crockpot

This is by far my favorite way to cook a Chuck Roast.  It has an incredible Italian spiciness that my family loves!  The flavor intensifies by the second day so if you have leftovers, great!

As a “Works for Me Wednesday” tip, Double this recipe and freeze 1/2 for another day.  Kitchen duty doesn’t get much easier than COOK ONCE, SERVE TWICE!  You can see this in my menu for this week here.

Italian Chuck Roast (Crockpot)

1 1/2 lb Chuck Roast

1 Cup Pepperocini Peppers, with packing liquid

1/2 Onion, Chopped

Salt and Pepper to taste

Place Roast in Crock Pot.  Season with Salt and Pepper.  Pour peppers and packing liquid over the top.  Scatter onion over that.  Cover and cook on low 8 hours.

Remove Roast from Crock Pot and place on a serving platter.  Place peppers around or on top of roast.

You can pour cooking liquid into a saucepan, add a beef bouillon cube and 1/4-1/2 t. of thickening agent.  (I used Xanthan. )  Heat over high, whisking until desired consistency.

Serve as Roast and Gravy

OR

Shred the meat. Place meat and peppers on rolls of your choice, top with Provolone Cheese and pop in the oven until bread is toasted and cheese is melted!

Yummy and without the bread is a very low carb option if that is how you roll!

You know I love to link up, so here’s who I’m joining with this post:  Works for Me Wednesday, Tuesdays at the Table, Crockpot Wednesday, Tasty Tuesday, Tempt My Tummy Tuesday.  Whew, that’s it.  I have no doubt you’ll have fun reading all the great link ups at these sites!
