Menu Plan Monday and More


Menu for January 24-28, 2011
Monday:  Sesame Tilapia (the oh, so yummy recipe is below), Cheesy Rice (cauliflower for the low-carber, aka me!),  and salad
Tuesday:  Crockpot Chili with Cornbread or Cheese Toast
Wednesday:  Steaks and Oven Baked Fries
Thursday:  Homemade Chicken Tenders, Skillet Corn, Salad
Friday:  Hamburgers and Hot Dogs, Chips and Dip
Snacks: Apples and peanut butter, Applesauce, Caramel Pie, Jell-o

Marinated Sesame Tilapia
4-6 Tilapia Filets
3-4 Tbs Sesame Oil
1 Tbs. Italian Seasoning
2 cloves garlic, minced
Salt and Pepper to taste

This recipe could not be easier.  The ingredients are to taste and easily adjustable.  I did not want the sesame oil to be too strong, so I used the amount listed and also used some extra virgin olive oil.

Place tilapia filets in baking dish.  Add remaining ingredients to the top.  Cover and refrigerate for 30 minutes to an hour.  Bake at 350 for 30 minutes.

HELLO!  This was so, so good!  The kids (well 2 of them) loved it as much as I did.  The sesame flavor is perfect with the tilapia.  This one will definitely be made again. 

By the way, I keep introducing fish in various "healthy" forms.  My husband swears it stinks up the house and won't try it.  Ima gonna keep trying.  We are getting to that age where we have to think about those things, at least some of the time!

     I just have to share this with someone and this seems like as good a place as any, so.....I am such a freaking dingbat!  I get so frustrated with myself sometimes, but honest to goodness, it's the truth. 

     Last year I got accepted to be part of the Neilson Consumer Panel.  I have wanted to do that FoReVer...literally.  I don't care if it's a geek thing to do.  I think I wanted to do that before they had the cool had held scanner that you get now.  Anyway, that's about the same time that I stopped blogging.  And let me just say that while I still get a little pang in my gut when I think about missing out on that opportunity, I do think I had good reasons.  I just could not add one more thing to my plate during that time.  Fast forward to now.
     Anyone who knows me knows I love my coffee.  I love my coffee and sugar free hazelnut creamer and if you know me well, you know that.  I take it everywhere I go.  I have done so for years.  Imagine if you can, my excitement when I receive an email from Coffee Mate creamers and they are inviting me to apply to host a coffee mate party in my home.  I didn't think I stood a chance, but I looked at the calendar and the date the party had to be held on was free, so that's all it took.

     I registered or whatever hoops they had for me to jump through and finally got to the "please pick me part."  I knew I had it then.  I typed to them exactly how many bottles of creamer I buy in a month.  I told them just how many people know that I'm a fan.   I told them of the hand made party favors I would make if they would just pick me and send me the loot for hosting.

     They picked me!!  I almost knew they would.  So for the last week (or 2) I have been imagining in my mind all the things I needed to do to get ready for the big day.  I even went so far as to tell one person to be looking for the upcoming invitation.

     Roll around to this weekend and the day I planned to send out the e-vites.  Imagine my surprise when I see that the deadline for sending the invites was January 15th.  UGH!  Dang it, I did it again.  I'm truly sick over it.  Well, not literally, but kinda.  I would have bee awesome hosting a game night coffee party!  They were going to send the games even!

     Will anyone ever take a chance on me again?  Can I talk myself into another shot with someone, somewhere?  I so hope so.  I just hope my silly living on a whim self will keep it together long enough to pull it off!
