Earlier this month, I looked at the deals available at a few stores in my area and decided what the good deals were. So with my coupon binder in hand, and my lists, I set off to buy, buy, buy!
This is such a foreign concept to me as I usually menu plan first, then shop. It was fun, but worried me senseless when I got home until I looked at what we had and made up a long menu plan.
Here is what we have been eating this month
Tater Tot Casserole
Corn Dogs and French Fries x 2 meals
Hot Dogs and French Fries x 2 meals
Fish Sticks, Shrimp Scampi, Baked Potatoes, x 2 meals
Asian Lettuce Wraps
Sausage Casserole
Kielbasa & Potatoes or Cabbage x 2 meals
Chicken Quesadillas
Italian Sausage Spaghetti
Frozen Lasagna
Country Style Ribs, Baked Beans
Grilled Chicken Tenders with Spanish Rice
Broiled Shrimp Skewers & Yellow Rice or Cauliflower “Rice”
Beef Stroganoff
Chicken Muffin Cups
Shepherd’s Pie
Homemade Pizza
We have an abundance of veggies, both canned and frozen so picking side dishes each night has been simple. I have been back to the grocery store for fresh foods like salad, mushrooms, and potatoes but that’s o.k. I also had to purchase some things for my youngest ds who is eating a restricted diet due to illness. That could not be planned for of course, so I consider us still pretty much on track.
The thing that amazes me the most is that we still have food that will not be used once I get through this menu. I’m not really up for a freeze/pantry cooking challenge, but I could be if necessity required. Our abundance is a direct result of consistently using coupons, stocking up on products when at their lowest price, meal planning and preparing meals that are planned for. It’s a really nice system that I’ve worked us into and I’m quite proud of the fruits of my labors ![]()
